Vegetarian Lunch/Dinner Recipes
A vegetarian lifestyle doesn't have to mean giving up variety or flavor! You can create delicious and exciting meals that are nutritious and satisfying.
Here are some of my favorite vegetarian lunch ideas (or dinner):
1. Simple Italian Tomato Spaghetti
This Italian tomato spaghetti is one my favorite dinners when I want something simple, tasty and comforting.
This an easy recipe - plus the sauce freezes well (which is great for meal prep. If you want to make in bulk for convenience, you can make a big batch of sauce and freeze into smaller portion sizes for a quick lunch or dinner).
I love the delicious flavor of this spaghetti and enjoy garnishing it with cheddar cheese and fresh basil.
Tasty Meal Tips: I also enjoy pairing it with appetizers such as crispy jalapeño poppers or garlic breaded mushrooms when I am in the mood for a real feast!

2. Vegetable Immunity Boosting Soup
For a nutritious lunch or dinner, this healthy vegan soup is a wonderful option. It is packed with fresh veggies including bell peppers, butternut squash and sweet potatoes. Definitely an excellent way to meet your 5 a day!
This soup can be made in bulk and frozen which is another good option for meal prep and planning).
Tasty Meal Tips:
- I enjoy having some sides along with this soup such as homemade coleslaw, garlic green beans, Mediterranean bruschetta and chickpea salad.
- Alternatively, serve with toasted sourdough bread, a leafy greens salad and some mushroom poppers!
3. One-Pot Ratatouille
One of my favorite go-to meals is fresh vegetable ratatouille with an Italian twist. It is delicious and easy to make using just one pot - on the stovetop!
This healthy ratatouille is made with simple ingredients including olive oil and fresh vegetables. It is perfect for weeknight dinners to incorporate colorful veggies into your diet.
Tasty Meal Tips: You can accompany it with fresh buttered bread or mix in some spaghetti (to make ratatouille spaghetti) to make it even more of a treat! Top ratatouille with cheddar cheese (or vegan cheese) and fresh herbs and enjoy!
4. Scrambled Eggs with Salsa, Guacamole and Fresh Orange Juice
This is a great way to start the day! Scrambled eggs are a great source of nutrients including protein and help keep you full for longer.
Tasty Meal Tips: I love having these eggs with guacamole (smashed avocado dip) and blender salsa (made with plum or cherry tomatoes) for some extra flavor!
For a full breakfast (or brunch) meal, enjoy these eggs with a fresh juice (including apple, orange and carrot juice, freshly squeezed orange juice or refreshing orange and passion fruit juice)!
Variations: You can also mix and match this delicious recipe to incorporate more veggies and flavor (including our veggie scrambled eggs, green eggs or green veggie eggs)!
5. Street-Style Pav Bhaji (with bread)
Enjoy my healthier version of pav bhaji - with homemade bread instead of the pav (buns)! Pav bhaji is an Indian street food dish. It consists of spiced mashed vegetables in a semi-thick tomato gravy, topped with red onion and a sprinkle of coriander (or cilantro).
Tasty Meal Tips:
- This dish is typically served with a toasted bread roll for a hearty, wholesome and delicious meal!
- Garnish with chopped onions, cilantro/coriander, tomatoes and a lemon wedge.
- Enjoy with a glass of refreshing pear juice for some extra nutrition!
6. Paneer rolls (or paneer wraps)
These paneer rolls (or paneer wraps) are so delicious, satisfying and enjoyable to eat – and perfect for easy and fun weeknight dinners!

This dish combines the wonders of Indian flavors and the comfort and joys of loaded wraps! These are made by assembling crispy paneer fingers into a wrap with salad leaves, dips and sauces as well as onions and peppers.
Paneer (Indian cottage cheese) is a good meat-free alternative and great source of protein and other nutrients.
What I love about these paneer wraps is you can mix and match the fillings you prefer. You can also use this recipe to add any leftover paneer dishes (including paneer tikka or chilli paneer) into the wrap for convenience.
Tasty Meal Tips: Enjoy this wrap with a range of dips and sauces including Indian mint sauce, guacamole, blender salsa and mint chutney (or coriander chutney)! For a twist add some peanut chutney or coconut chutney.
7. Rice with Paneer Manchurian
Paneer Manchurian is a popular savoury Indo-Chinese fusion dish. This dish combines soft and crispy cubes of paneer (Indian cottage cheese), marinated in a blend of spices or seasoning and fried with peppers and onions, tossed in a spicy, tangy and semi-sweet sauce.
You may have seen this dish typically served as an appetizer or side in Indian or Indo-Chinese restaurants. You can make this dish as a dry, semi-dry or gravy version. This recipe gives you a dry/semi-dry version of paneer manchurian (without gravy).
Tasty Meal Tips: Serve this paneer dish with rice, tandoori naan/vegan roti (soft Indian flatbread) or vegetable noodles!
8. Air Fryer Naan Pizza
Enjoy air fryer naan pizza - using homemade or store-bought naans!
This is quick and easy to make - taking just 2 minutes to cook in the air fryer!
Other easy lunch ideas include:
- Sandwiches
- Sandwich fillings can including cheese, crunchy cucumber, red peppers, avocado and salad leaves!
- Alternatively, you can make a sourdough grilled cheese sandwich and enjoy with sweet potato wedges or purple sweet potato fries.
- Salads with dressing
- Avocado salad with onions, peppers, fresh salad leaves and a seasoned lemon juice dressing can be a great add-on or a simple and light lunch.
- I find that a flavorful dressing can turn a "boring salad" into something vibrant and refreshing! Make a simple dressing with lemon juice, olive oil, salt and pepper (with a hint of garlic for extra flavor).
- Other salads you can enjoy include mango and cucumber salad, beetroot salad, tomato and zucchini salad and Mediterranean salad!
- Jacket potato or jacket "sweet potato"
- Another easy vegetarian recipe is jacket potato!
- For a simple meal, enjoy classic jacket potato, cheese and beans!
- Alternatively, make jacket sweet potato by roasting sweet potatoes in the oven (or air fryer). Season with salt and pepper and enjoy with some fresh homemade coleslaw and sweetcorn (and salad)!

Meal planning tips
- To make a meal plan I recommend keeping a list of vegetarian lunch ideas and a collection of your best vegetarian recipes! This also helps to plan for grocery shopping so you can have fresh produce to make delicious, easy vegetarian lunches and dinners.
- One of my favorite vegetarian meal prep ideas is to keep ingredients chopped in advance and store them in airtight containers in the fridge. This makes cooking meals so much easier and more convenient!
- Another tip is to make meals in advance and in bulk (which are freezer-friendly) and serve in smaller portions. Label your containers (with dish name and date) to keep track of your dishes.
