Blender salsa is a salsa you make by blending fresh tomatoes with a combination of other ingredients to produce a slightly smooth and/or chunky sauce. This dip is also known as “salsa roja” (which means red sauce).

- Blend until smooth. Blend until salsa is smooth, taste and add more salt or lemon juice to taste if needed (as this will depend on the sweetness of the tomatoes). Serve immediately or store in an airtight container and refrigerate.

- Use fresh ingredients: When selecting onions or chillies ensure they are firm to touch. You want to ensure the onion you select is dry, fully coloured with no patches and soft spots. When shopping for coriander or cilantro – look for bunches which are vibrant, green and uniform in colour and have a fresh aroma, with no wilted stems or leaves.
