Grilled Cheese using Sourdough Bread
Whenever I hear the words “grilled cheese” I instantly think of the comfort it brings in my meal! And this sourdough grilled cheese is no different!
This takes traditional cheese sandwiches to the next level with the addition of sliced onions, tomatoes and fresh lettuce! Every bite is tasty, satisfying with a delightful blend of textures!
The disctinctive taste and texture of hearty sourdough bread also bring a unique flavor to this grilled cheese recipe!

Potential Health Benefits of Sourdough Bread
Sourdough bread is a type of fermented food and has been linked with potential health benefits including:
- Improved Digestibility – sourdough bread may be easier to digest as a result of the fermentation process.
- Nutrient absorption – there is a greater bioavailability of nutrients with fermented foods, which means you can absorb more of the nutrients
- Healthier gut – beneficial bacteria (probiotics) are introduced during the fermentation process. This can help support a healthier gut.
- Blood sugar control – sourdough bread has a lower glycemic index compared with other types of bread, which can potentially help to control blood sugar levels.
- Healthy aging – some research has shown that fermented foods including sourdough have many beneficial properties, including being a source of antioxidants. In addition, sourdough was associated with potential anti-hypertensive and anti-diabetic properties.
Notes on Recipe Ingredients
To make this grilled cheese you will need:
- Sourdough bread: you can use homemade sourdough bread or any store-bought variety. If you don't have sourdough available, you can also make this grilled cheese with regular white bread.
- Cheese: I recommend using a mixture of cheese including grated/shredded cheddar cheese and mozzarella cheese (compared with cheese slices) for a wholesome cheesy sandwich! I prefer using white cheddar (cheese which has not been further processed with any coloring). You can use mild, medium of extra sharp cheddar depending on your preference - I opt for medium.
- Red onions: for flavor and crunch to this grilled cheese
- Tomatoes: use ripe juicy tomatoes for the best results
- Lettuce: for the finishing touch. Wash and dry lettuce before adding to the sandwich.
Equipment
To make this grilled cheese you will need:
- A cutting board (chopping board) and knife: to prepare the ingredients.
- Large flat frying pan with a lid (or griddle pan/cast iron skillet): to toast the bread and melt the cheese on top.
- Box grater: You will also need a box grater to grate/shred the cheese. I prefer using freshly grated cheese but you can also use pre-shredded cheese. Use the larger side of the box grater (for medium sized shredded cheese).
- Spatula: to flip the sourdough bread slices.
How to Make Sourdough Grilled Cheese
- Preheat a large frying pan over low heat. As the pan preheats, brush 4 slices of sourdough bread with olive oil, evenly coating both sides.
- Place sourdough bread in the pan and cook on medium-high heat for 2-3 minutes, or until the bread is golden brown and crispy.
- Flip the slices of bread to cook the second side. Sprinkle cheese on top of 2 of the toasted side of the bread slices (the other two will be your sandwich lids).

- Cover and cook. Cover the pan with the lid and cook for another 4-5 minutes on medium-low heat, or until the cheese has melted and the bottom of the bread is golden and crispy.
- Assemble. Remove from heat and transfer onto a cutting board. Add sliced onions, tomatoes and lettuce. Top with the other two slices of toasted bread. Cut in half and enjoy fresh!
Tips for the BEST Sourdough Grilled Cheese
- Use fresh bread: use fresh sourdough bread for a perfect grilled cheese sandwich. Using fresh bread gives you the best taste and texture.
- Cover with a lid: this keeps the heat in the pan for that satisfying melty cheese taste in the sandwich.
- Prepare ingredients whilst toasting the bread: this is a time saving tip for faster meals. Whilst the sourdough is toasting, I prefer to slice the onions, tomatoes and wash the lettuce. This saves time and also keeps the ingredients prepared so I can assemble the sandwich as soon as the sourdough is toasted.
- Only assemble the sandwich when you are ready to eat: this great grilled cheese sandwich is best served immediately for maximum crunch (and zero sogginess).
Variations
This sandwich can be customized with various sandwich fillings including roasted or caramelized onions, another type of cheese including pepper jack/monterey jack cheese, roasted peppers or mayonnaise!
Add sliced jalapeños for a spicier kick!
How to Serve

You can also serve with salads including beetroot salad, mango salad or tomato tomato and zucchini salad.

Storage Tips
I don’t recommend storing this sandwich - serve fresh!
However for meal prep, you can prepare fillings in advance and store in the fridge in an airtight container. Tip: Make sure ingredients are dry before storing in a container.

- Optional – Grilled sliced red onions ½ red onion, sliced and roasted in a pan for 2 minutes with a hint of olive oil
