Beetroot/beet stains! So I recommend using parchment paper (on top of the cutting board) and gloves when cutting into cubes.

- Add the lemon juice and pomegranate juice. Toss to combine. Serve and enjoy!

- Prevent staining: juice from beetroot can stain surfaces and hands. To prevent this, wear food-safe gloves when chopping the beetroot and place parchment paper/baking paper on top of the cutting board to prevent your board from becoming stained with purple/red/pink color! Rinse your knife after using. Lemon juice is another way to help remove any beetroot stains.
