These purple sweet potato fries are simply made by peeling and slicing purple sweet potatoes into fries. These are coated with a flavorful and seasoned mixture and air fried to perfection!
These fries bring together the unique taste of purple sweet potatoes and delicious garlic and herb seasoning to give you a delightful and scrumptious snack.
This air fryer recipe will be one to add to your collection... no deep frying required - instead the air fryer uses hot air to cook these purple potatoes into delicious and crispy fries! These are also faster to make than in a traditional oven.
What do Purple Sweet Potatoes taste like?
Purple sweet potatoes are slightly different from regular sweet potatoes and bring their own unique flavor profile.
These are less sweet than classic sweet potatoes and have a more pronounced earthy flavor with a hint of nuttiness.
What are the Potential Health Benefits of Purple Sweet Potatoes?
- Purple sweet potatoes a highly nutritious ingredient with many potential health benefits.
- Purple sweet potatoes are rich in antioxidants, including anthocyanins. Antioxidants help to reduce inflammation in the body and the risk of chronic diseases including heart disease. Interestingly purple sweet potatoes have approximately 4-7 times the amount of this antioxidant than other sweet potatoes. Plus purple sweet potatoes have three times more antioxidants than blueberries!
- These potatoes are also a great source of nutrients including fiber, vitamins and minerals such as vitamin C, potassium and vitamin B6. These nutrients have different roles in the body including aiding digestion, boosting immunity and regulating blood pressure.
Notes on Recipe Ingredients
- Purple Sweet Potatoes: wash and peel the potatoes thoroughly before cutting into fries. These purple sweet potatoes have a purple skin and flesh. These different from purple yams and Japanese sweet potatoes with white flesh.
- Olive oil: you can use regular olive oil or extra virgin olive oil. I prefer extra virgin olive oil for the added nutrients (including antioxidants). You can use other oils including avocado oil or coconut oil but this may slightly alter the flavor of these fries. As we are using an air fryer you need less oil to cook these fries.
- Garlic: mince garlic is added to enhance the taste of these fries. I prefer fresh garlic to garlic powder for more flavor!
- Seasoning: salt and dried parsley is added to season these fries. You can also sprinkle with freshly ground black pepper or paprika (to taste).

How to Make Air Fryer Sweet Potato Fries
- Cut the washed and peeled purple sweet potatoes into fries (fry-shaped sticks).
- In a bowl, toss the sweet potato fries with olive oil, salt and minced garlic and herbs until coated evenly.
- Preheat air fryer to 200°C/400°F.
- Arrange coated fries in a single layer into the lined air fryer basket. Ensure they are not overcrowded or overlapping. You may need to air fry in batches (depending on the size of your air fryer). Air fry for 10 minutes on 200°C/400°F, flip halfway to ensure even cooking.
- Once cooked, remove from air fryer tray
, sprinkle more salt to taste. Serve fresh for best results and enjoy!
Tips
- Serve fresh with your favorite dipping sauce: serve these fries straight way for the best taste and texture. Enjoy with dips including mayonnaise, garlic and herb dips, guacamole or blender salsa.
- Line air fryer tray with parchment/baking paper (or a baking sheet): this will prevent the sweet potato fries from sticking to tray. Ensure the parchment/baking paper you use is heat-resistant (designed for baking).
- Parchment paper: I also recommend using white/light colored parchment paper compared with darker parchment paper (this can cause your baked goods to darken quickly and affect cooking time).
Variations
- Cheesy sweet potato fries: add a sprinkle of cheddar cheese or mozzarella cheese once fries are cooked, air fry for another 30-60 seconds, or until cheese has melted. You can also add cheese to leftover fries (just ensure you the fries are warm before adding cheese).
- Fresh herbs: for a refreshing taste, garnish with herbs including fresh cilantro/coriander or fresh parsley. Sprinkle chili powder, paprika or garlic salt as desired.

How to Serve
- Serve these purple sweet potatoes as the perfect side dish to with salads including Mediterranean salad, beetroot salad or mango and cucumber salad.
