Ratatouille Spaghetti (or Pasta) - Vegan-Friendly
This is one of my favourite ways of enjoying leftover ratatouille – which is why it needed a post of its own!
Perhaps it is just the comfort of spaghetti (or pasta) and the magnificence of ratatouille – combined forms a spectacular dish. This dish is a great way to incorporate veggies on the same day as your ‘Spaghetti night!”...
This a great way to use any batch of ratatouille you may have made in advance too!
What is Ratatouille?
- Ratatouille (pronounced ‘rat-tah-too-ee’) is a colourful and flavourful vegetable stew originating from Provence (in the South of France). The word ratatouille comes from the French “touiller” which means “to stir up” and the word “rata” which can refer to a stew or a simple mix of vegetables.
- Ratatouille is a popular dish enjoyed all over the world, including France. It is made with a number of vegetables (including courgettes/zucchini, aubergine/eggplant and peppers) as well as herbs, garlic and onion to create a hearty, tasty and traditional dish.
What is Ratatouille Spaghetti or Ratatouille Pasta?
This term was coined simply by what this dish is – ratatouille used as the “tomato-based sauce” mixed with freshly boiled spaghetti or pasta!
This makes a whole meal of its own and is highly recommended for a delicious and healthy meal packed with fresh vegetables and amazing flavours!

To make this incredible Ratatouille Spaghetti you will need:

- Ratatouille: This is the “tomato-based sauce” for your spaghetti. You can use leftover ratatouille or make a fresh batch of Italian-style/authentic ratatouille.
- Spaghetti: you can use any pasta including regular or whole-wheat spaghetti, this is boiled before mixing with the “Ratatouille” tomato sauce.
- Vegan cheddar cheese (grated/shredded): for indulgence and simply because … what is pasta without cheese? This is optional but highly recommended for the ultimate ratatouille spaghetti! You can also use regular cheddar cheese instead of vegan cheese if preferred.
Equipment
- I recommend using a non-stick medium/large pan to help cook and heat the ratatouille. I also recommend using a silicone spatula or wooden spatula to help you mix the vegetables and cook the ratatouille.
- You will also need a pan to boil the spaghetti and a colander to drain the pasta once boiled.
- Plus, a grater to grate/shred the cheddar cheese (if using)!
How to make Ratatouille Spaghetti
- Boil spaghetti according to instructions. Add boiling water and spaghetti into a pan and boil according to instructions, until cooked and ‘al dente’.
- Heat ratatouille portion. While boiling the spaghetti, heat the desired amount of ratatouille (so it is hot whilst serving with spaghetti)
- Mix and top with grated cheese. Once the spaghetti has boiled, drain using a colander and mix with the ratatouille sauce. Immediately top with grated cheddar cheese, to allow the cheese to melt into the spaghetti. Serve and enjoy!
Tips to make the Best Ratatouille Spaghetti/Pasta
- Cook the spaghetti/pasta so it is just right or ‘al dente’ – each spaghetti pack has its own cooking instructions, I recommend monitoring the spaghetti so it is cooked to the perfect consistency (rather than overcooked). The phrase ‘al dente’ is the Italian phrase for ‘to the tooth’ and is used to describe the perfect consistency of pasta when cooked. Once boiled, drain the spaghetti using a colander (this stops the spaghetti from continuing to cook in the hot water, even when the heat is switched off).
- Serve immediately – there is nothing better than freshly made (and served) spaghetti – which is why I highly recommend serving this dish immediately. Only boil the spaghetti and heat the ratatouille when you are ready to serve this dish for maximum taste and freshness!
- Add cheese immediately – to allow the cheese to melt into the spaghetti I recommend sprinkling the cheese immediately after mixing the Ratatouille with the spaghetti. Alternatively, you can add the sauce on top of the spaghetti and sprinkle the cheese immediately. Then mix together (to mix the cheese with the sauce and spaghetti). Both ways you get a wonderfully decadent and hearty meal!
How to serve Ratatouille Spaghetti
- Ratatouille spaghetti is a wonderful dish which can be enjoyed for lunch, dinner or a snack – perfect with grated cheddar cheese!
- This dish can also be served with garlic bread, roasted butternut squash soup or fresh homemade Italian bread!
- For an ultimate feast serve with tomato spaghetti, crispy air fryer jalapeño poppers and fresh homemade coleslaw!
Storage Tips
- This ratatouille spaghetti is best when served immediately
- If you wish to make this in advance, I would recommend only preparing the ratatouille. Once you make the ratatouille, you can store in an airtight container and transfer in the fridge (once cooled) for up to 1 day. Reheat before assembling with the spaghetti. You can also grate cheddar cheese in advance and store in a dry, airtight container in the fridge.
- I would recommend only boiling the spaghetti when ready to serve, for maximum freshness and taste!

- 2 cups ratatouille (leftover) (or make fresh ratatouille)
- 170 g spaghetti boiled according to packet instructions (use more as desired)
- Handful Vegan Cheddar cheese grated, handful (or regular cheddar cheese based on preference)
Instructions
