Easy Avocado Toast
Avocado toast is a popular choice… but I have found there is an art to making this dish go from “great” to “spectacular”!
I have tried my fair share of smashed avocado toast… as someone who loves breakfast and brunch, I love to try breakfast dishes from various restaurants and cafés.
So, I can honestly tell you that this avocado toast is my favorite and best avocado toast recipe for a simple breakfast.
Why? This avocado toast is:

- SO quick and easy to make – you can whip this dish up in less than 10 minutes – effortlessly!
- Versatile – you can enjoy this dish alone or as part of a breakfast with fried egg, tomato toast or scrambled eggs!
This is my go-to recipe for avocado toast and everyone who has tried this dish LOVED it and wants to know “how” and “why” it “tastes so good”!
I also have a few tips and tricks (plus a secret step) in this post – which make this avocado toast stand out from the rest!
Ingredients You’ll Need to make the Avocado Mix
- Avocado: use nice ripe avocados (slightly tender to touch if you give them a gentle squeeze), avoid avocados which are unripe or overripe or stringy. Look out for any bruised bits of the avocado, carefully use a knife to scrape those bits from the rest of the avocado to avoid adding them into the avocado mix.
- Coriander/cilantro: this herb adds a refreshing fragrance and taste, use fresh coriander/cilantro and chop finely.
- Red onions: to enhance the flavors in this avocado mix.
- Green chillies (optional): for optional spice, you can add chopped green chillies.
- Seasoning: fresh lemon juice (or bottled), pinch of salt and a little bit of freshly ground black pepper are used to season this avocado mix.
- Optional - you can also add a pinch of spring onions/scallions for extra flavor.
How to make the Best Avocado Toast
- Add the chopped ingredients into a bowl. Add the chopped coriander, spring onions, red onions and (optional extras - chillies/spring onions) into a medium bowl.
- Add the avocado and seasoning. Slice the avocados in half and scoop out the avocado flesh and add into the bowl. Add the salt, black pepper and lemon juice.
- Mash until creamy. Using a masher, mash the avocado mixture until creamy and smooth, or until desired consistency. Remove the masher from the bowl (use a spoon to scoop up any avocado from the masher and transfer into the bowl). Using your spoon, give the avocado mix a final stir.
- Spread evenly over buttered toast. Toast your bread until golden and crispy, spread with salted butter and then spread the avocado mix. Serve and enjoy!
Great Tips to make the Perfect Avocado Toast
- Use fresh bread – I love (and recommend) using sourdough bread as the best bread for this recipe. I also enjoy using homemade Italian bread but you can use any type of bread for this recipe. Homemade or store-bought bread including whole grain bread/whole wheat bread or seeded bread also work well. Ensure your bread is fresh (good sourdough bread is soft and crusty - and not stale).
- Toast and butter the toast – this is a secret trick to making this avocado toast stand out, toast the bread well so it offers a crispy base and butter the toast with slightly salted butter before spreading the avocado mix – this adds a richness to the dish which takes it to another level!
- Mash the avocado mix – use a potato masher to mash all the ingredients together in a bowl. This helps the avocado mix to become creamy and releases the flavour of the other ingredients and herbs to season.
- Spread generously and serve immediately – top your crispy, buttered and toasted bread with a generous helping of this creamy avocado mix and spread across the entire toast so every bite is as wholesome and enjoyable as the next! Serve immediately as the toast is still crispy – if you leave it for too long then the toast will start to soften!

Variations
You can mix it up with the following variations:
- Red chili flakes (red pepper flakes) or red/ green chili peppers – spice it up with a sprinkle of chilli flakes or chopped chillies.
- Seeds – sprinkle some toasted pumpkin or sesame seeds for extra crunch. Sunflower seeds and hemp seeds are other great options for an extra boost of nutrient.
- Garlic – for a bolder flavour, add half a garlic clove (minced) in the avocado mix
- Bagel seasoning - you may homemade bagel season or you may buy this from your local grocery store.
- Olive oil (extra virgin olive oil) - you can add a little olive oil - a great option is adding a drizzle of olive oil for a bit of restuarant style indulgence.
- Tomato salsa drizzle – drizzle over some blender salsa or pico de gallo for extra flavorr!
- Other topping ideas/variations you may wish to experiment with - chopped cherry tomatoes, flaky salt, hot sauce, lemon zest, fresh mozzarella, a generous sprinkle of fresh herbs/your favorite seasoning or even finishing with a balsamic glaze.
How to Serve
This avocado toast is best served immediately so the toast stays crispy!
You can serve with a small bowl of fresh fruit or salad, tomato toast and fresh apple, orange and carrot juice.
Other options for egg lovers include fried or poached egg hard-boiled egg, or scrambled eggs – for the ultimate hearty breakfast or brunch! This recipe is a simple dish that works as an easy breakfast or snack/meal at any time of day.
Shortcut tip
If you would like to make in advance/speed it up – a shortcut is to prepare the ingredients beforehand (by chopping the coriander/cilantro and onions) and storing them in an air-tight container in the fridge. Simply mix with the avocado, lemon, salt and pepper when you are ready to serve.
