Healthier grilled cheese with avocado
This sandwich is everything you need in a sandwich. A grilled cheese. Only healthier!
Fresh slices of bread (I recommend homemade Italian bread or sourdough)... toasted on a griddle pan + melted cheese. Topped with slices of red onion and bell peppers + a layer of creamy avocado slices + fresh spinach (+ your favourite sauce – this is optional!)!
This sandwich is healthy, quick and easy to make (requires no butter or oil – only optional for indulgence!) - making it a refreshing and light meal!
I love how the layers of this sandwich blend perfectly in harmony. The softness and flavour of the melted cheese against the crunch of the toasted bread... topped with onions and peppers tangled with the cheese – and the creaminess of the avocado and tenderness of the fresh spinach!
What is not to love in this sandwich? Each and every bite of this sandwich is purely divine – a classic comfort food (like our sourdough grilled cheese sandwich) – plus made with fresh, simple and healthy ingredients. Notes on Recipe Ingredients
To make this classic grilled cheese with avocado – you need the following:
- Bread: I use fresh homemade Italian bread (no preservatives or added sugar) and it tastes delicious, you can use store-bought if preferred – just make sure it is fresh.
- Cheese: I recommend using cheddar cheese slices.
- Red onions: this adds flavour and crunch to the sandwich and is added on top of the cheese so it gets slightly incorporated in the melted cheese.
- Bell peppers: you can use a mixture of red and green bell peppers in this sandwich for a variety of flavours (both bell peppers have slightly different flavour profiles so I recommend a combination).
- Avocado: this adds a creaminess and richness to the sandwich, use organic ripe avocados for the best results (without dark spots).
- Spinach: you can use other leafy greens but I find spinach has the best taste and complements the other ingredients with a subtle flavour.
How to make Avocado Grilled Cheese Sandwich
- Toast the bread and add cheese: Place two slices of bread on the griddle pan and toast on medium/high heat until crispy. Once toasted and crispy, use a spatula to flip the bread (so the toasted side is facing up). Switch to low heat and add cheese slices to both breads. Tip: if you are in a hurry you toast bread slices in a toaster and then place back on a griddle pan before adding the cheese.
- Add onions. Add slices of onions and allow the cheese to melt with the onions.
- Add red and green bell peppers. Add slices of peppers on top of the onions, continue to toast for a few minutes, or until the cheese has melted and the bread is toasted and crispy.
- Add avocado. Add slices of avocado to cover the peppers.
- Top with spinach. Add chopped spinach (making sure to cover the entire surface of each slice).
- Top with toasted bread. Top with another two slices of toasted bread (you can either use a griddle pan or toaster). Serve and enjoy!
Substitutions and Variations
- Bread - use gluten free bread instead of Italian bread or sourdough to make this grilled cheese gluten-free friendly.
- Vegan - the cheese slices can be replaced with a plant-based cheese to make this grilled cheese vegan friendly.
- Leafy greens - instead of spinach you can also use other leafy greens or add a handful of microgreens for an extra nutrient boost.
- For a classic grilled cheese: melt butter and oil to toast the bread, this will add richness to your sandwich for that “classic” taste.
- Chickpeas: add a layer of smashed chickpeas for extra protein and a nutty flavour!

Tips for making the BEST Avocado Grilled Cheese Sandwich
- Use fresh ingredients: look for fresh onions, peppers and avocado – this will bring more flavour in the sandwich. I also recommend using organic spinach, making sure the leaves are vibrant and green with no yellow spots or discolouration. Wash the peppers and spinach and dry with a paper/kitchen towel before chopping these ingredients.
- Prepare ingredients in advance whilst toasting the bread: this is a time saving tip I like to follow, while I toast the bread I like to simultaneously slice the onions, peppers and avocado (and spinach). This saves a lot of time and also keeps the ingredients prepared so I can assemble the sandwich fairly quickly.
- Only assemble the sandwich when you are ready to eat: this grilled cheese is best served fresh, to keep the sandwich crisp and prevent it from getting soggy.

Storage Tips
Although I don’t recommend storing this sandwich, if you wish to save time prepare the ingredients for the sandwich fillings in advance. Store in an airtight container (ensure the ingredients are dry before slicing).
