There is something truly special and satisfying about making your own bread!
If you haven’t tried it yet I highly recommend making your own bread! Then sit back and enjoy a warm slice of fresh bread with a tiny dollop of butter (vegan butter) and enjoy!
I love how quick, easy and convenient this vegan bread maker recipe is! This recipe has been adapted from the original Italian bread recipe provided by Panasonic by reducing the salt, removing the sugar and make it softer with ½ tablespoon more olive oil.
This bread machine has helped make a lot of bread - the first time I tried homemade bread I was amazed at how fresh it tasted!
This has been the perfect recipe to help me replace store-bought bread with freshly made bread using very little effort!
I use this fresh vegan bread recipe for sandwiches (avocado sandwich), sweet or savoury toast (including tomato toast and French toast), bruschetta and even bread pudding!
Bread makers can be a great way to make a variety of bread, including including Italian bread, sourdough bread and French bread. You can also make a sweet bread loaf in this machine (using maple syrup).

Notes on Recipe Ingredients
- Strong white bread flour: use strong white bread flour for the best texture of bread. This recipe does not use all-purpose flour/plain flour.
- Dry yeast: make sure to use active dry yeast (this is not instant yeast).
- Water: to help activate the yeast. Use room temperature (or slightly warm water).
- Extra virgin olive oil: for a richer taste (you can use regular olive oil if preferred).
- Salt: this enhances the flavour of the bread and helps with the structure of the bread.
Equipment
- This homemade bread recipe uses a Panasonic bread maker (Model No. SD-YR2550) to make fresh bread. This machine comes with a bread machine pan (loaf pan) where the dry ingredients and wet ingredients are added (excluding yeast).
- If you are using another bread maker, check your specific bread maker’s user manual for specific instructions on how to operate the machine.
- Ensure your equipment is clean, dry and properly attached.
- Carefully measure out all ingredients for best results.
How to Make Fresh Bread (step-by-step with images)
- Place ingredients into the bread pan and/or yeast dispenser. Add the strong white bread flour, extra virgin olive oil, salt and water into the bread pan. Transfer bread pan back into the unit and make sure it is secure, closing the lid. Place measured yeast into the appropriate compartment (either yeast dispenser or bread pan depending on the Bread maker model you are using).
- Select setting and bake bread.
Use the control panel to select the setting for a “Basic Rapid Italian bread” to make a medium loaf (Menu 2: 1h 55 min), press start and bake the bread. The bread maker will mix, knead and bake the bread! - Allow to cool. Once bread is baked, carefully transfer the bread onto cooling rack to allow bread to cool. Use oven gloves to remove the bread pan and shake the bread out onto the cooling rack (as it will be hot).
- Slice the bread using a sharp knife and bread cutter. Serve and enjoy!
Top Tips for Making Fresh Bread
- Cool bread on cooling rack: once the bread is made carefully remove it from the bread maker and transfer the loaf onto a cooling rack. This helps prevent the bread from becoming soggy (as the steam from the bread can release moisture).
- Use bread cutter to cut slices of bread once cooled: it will be easier to slice the bread once it has fully cooled. I recommend using a bread cutter and sharp knife to help cut the bread into even slices
- Ensure yeast is active: this will help ensure your loaf of bread is fluffy, light and rises well.
- Variations/other ideas: you can make other vegan bread machine recipes including whole wheat bread using whole wheat flour. You can also make your own gluten-free bread recipe - your bread machine manual may include this option (note: you would need specific ingredients including gluten-free flour, xanthan gum or psyllium husk powder).
Storage Tips
- This bread can be stored at room temperature for up to 1 day or in the fridge for up to 2 days and freezer for up to 3 months.
- For maximum freshness, I recommend placing your bread in the fridge or freezer, transfer in a freezer-friendly zip-lock bag and label to keep track of your stock.
How to Serve
You can serve this bread hot or cold. You can also toast this bread with butter (vegan butter).
This bread can also be used for sandwiches, bruschetta, avocado toast and French toast!
