This avocado grilled cheese sandwich features toasted bread with melted cheddar cheese, sliced onions and peppers, creamy avocado and fresh spinach! You will love how satisfying, wholesome and delicious this grilled cheese with avocado is – plus it is so quick and easy to make!
2Cheese slicescheddar cheese (use more slices if desired)
2Avocadosmedium ripe avocados, with no bruises
½Red onionsliced
½Red bell peppersliced
½Green bell peppersliced
1cupSpinachwashed, dried and chopped
Instructions
Place two slices of bread on the griddle pan and toast on medium/high heat until crispy.
Once toasted and crispy, use a spatula to flip the bread (so the toasted side is facing up). Switch to low heat and add cheese slices to both breads.
Once crispy, flip the bread (so the toasted side is facing up), switch to low heat. Add cheese slices to both breads, followed by onions and red and green bell pepper slices. Heat for another 3-4 minutes, until the cheese has melted and the other side of the bread is toasted.
Use a spatula to carefully transfer the toasted semi-filled breads onto a plate and add avocado slices and chopped spinach.
Top with another two slices of toasted bread (you can either use a griddle pan or toaster). Serve and enjoy!
Notes
Prepare ingredients in advance whilst toasting the bread: this is a time saving tip I like to follow, while I toast the bread I like to simultaneously slice the onions, peppers and avocado (and spinach). This saves a lot of time and also keeps the ingredients prepared so I can assemble the sandwich fairly quickly.
Only assemble the sandwich when you are ready to eat: this grilled cheese is best served fresh, to keep the sandwich crisp and prevent it from getting soggy.
Time saving tip: if you are in a hurry you toast bread slices in a toaster and then place back on a griddle pan before adding the cheese.
