What is matcha?
- Matcha is a bright green powder and type of green tea originating in Asia, traditionally used in Japanese culture and now used worldwide in snacks, beverages and desserts!
- Matcha is made from green tea leaves that are ground into a fine powder.
What does matcha taste like?
- The process used to prepare matcha powder gives this ingredient its vibrant green color and unique taste – an earthy, slightly rich flavour with a hint of sweetness and bitter undertone.
- The taste of matcha can vary slightly based on the preparation and quality of matcha.
- For more detail on the taste and flavour profile of matcha check out our simple guide on matcha.
Health benefits of matcha
- Studies have shown matcha has a variety of potential health benefits including aiding weight loss, promoting heart health and protecting the liver.
- Matcha is rich in antioxidants, which help reduce inflammation and cell damage in the body.
- Matcha may also improve brain function and enhance attention and memory – it contains caffeine and a component called L-theanine, which adjusts the effects of caffeine to promote alertness and sustain energy levels (avoiding energy crashes that may occur after consuming caffeine).
- At the same time, consume matcha in moderation as it contains a high amount of caffeine and may not suit everyone.
What are the different grades of matcha green tea powder?
The different grades of matcha green tea powder include Premium Grade, Ceremonial Grade and Culinary Grade.
Premium Grade matcha and Ceremonial Grade matcha are ideal for consumption as tea, in beverages, and as a cooking ingredient.
Culinary Grade matcha is specifically recommended as an ingredient for cooking, whether incorporated into recipes or blended into shakes and milk.
Notes on recipe ingredients
- Almond flour: use blanched almond flour (not almond meal).
- Matcha Green Tea Powder: this powder has a vibrant green color. This powder gives these brownies a unique and distinctive matcha tea flavor. I use Japanese Organic Matcha Green Tea powder (Premium grade) in this recipe as it is a good quality matcha powder. If you are in the US (I recommend this organic matcha powder - high quality matcha with stronger flavor. For a milder flavor, Culinary grade matcha powder is often used, this is also cheaper than Ceremonial grade matcha powder).
- Baking powder: this helps the brownies rise slightly as almond flour is denser compared to regular all-purpose/plain flour.
- Maple syrup: use grade A maple syrup which is refined sugar-free, to add sweetness and moisture in these matcha brownies.
- Butter: use unsalted butter for this recipe, which is melted before adding to the batter.
- Pure vanilla extract: vanilla complements the matcha flavour in these brownies.
- Eggs: use whole eggs, these act as a binder in the batter.
- White chocolate chips: I recommend white chocolate for the best flavor - the sweetness of the white chocolate chips takes this matcha batter to another level. White chocolate chips are added in the batter. You can also drizzle melted white chocolate on top of the matcha brownies. I use refined sugar-free white chocolate chips in this recipe to keep the matcha brownies refined sugar-free.

Equipment
You will need a square baking pan (also known as baking tin, square cake tin or brownie tin for those of you in the UK) to bake the matcha brownies, I recommend using an 8 x 8-inch baking pan.
I also recommend using a whisk and silicone spatula – when mixing your batter and a cooling rack to cool the brownies.
I recommend using a kitchen scale to measure your ingredients by weight for accuracy.
Preparation
- Before making the batter, measure your ingredients.
- Oven vs air fryer: Preheat the oven (180°C/356°F) or air fryer to 170°C/338°F (note: if you are using an air fryer it will take less time to preheat than the oven so preheat 5 minutes before the batter is made). This matcha brownies recipe is made using an air fryer. You can also bake in the oven at 180°C for 15 minutes or until batter comes out smooth. The baking time varies in the oven and air fryer. This is because air fryers use circulating air to move heat around and bake the food quicker than an oven.
- Line your square pan (baking pan or brownie tin) with parchment/baking paper: I recommend using a bit of butter or oil to grease the tin before adding the paper (to help it stick to the tin).
How to Make Matcha brownies (step-by-step with images)
- Sift and combine the dry ingredients. In a large bowl, use a sieve to sift the almond flour, matcha powder and baking powder and whisk to combine together.
- Mix the wet ingredients. In another bowl, add the eggs, maple syrup and vanilla and whisk to combine. Pour in the melted butter and whisk again until combined.
- Add the dry ingredients to the wet ingredients. Add the dry ingredients to the wet ingredients and use a spatula to combine (don’t overmix). Gently add the white chocolate chips and fold to combine.
- Transfer into baking pan/tin and bake. Line the baking pan/tin with parchment paper/baking paper. Transfer the brownie batter into the prepared pan and bake in preheated air fryer (bake setting 170°C/338°F) for 9-10 minutes or until cooked (a skewer inserted into the centre of the brownie should come out clean).
- Allow to cool. Once baked, allow the baking tin to cool slightly before removing the brownie onto a cooling rack (you can use the parchment paper to lift the brownie). Optional - drizzle melted white chocolate over the brownie and slice into squares and enjoy!
Tips to make the best white chocolate chip matcha brownies
- Sift the dry ingredients – this helps to remove any lumps to the ingredients can fully combine with each other and the batter is evenly baked.
- Slice brownie once cooled with a sharp knife – for cleaner slices of brownies, slice when brownies have cooled slightly using a sharp knife (with a smooth edge).
- Use room temperature ingredients – as we are using melted butter in these brownies, it is important for the wet ingredients to be room temperature (if too cold the melted butter will form clumps). Therefore, allow ingredients to come to room temperature to help all ingredients combine easily. Alternatively, maple syrup can be warmed gently for 10-15 seconds in the microwave. If you are using eggs from the fridge, you can keep them in a bowl of warm water for a few minutes before using.
- Drizzle with white chocolate – this is the sprinkle on top – and the taste and sweetness of white chocolate perfectly complements the delicate matcha tea flavour!
Storage tips
- These matcha brownies can be stored in the fridge for 4-5 days or in the freezer for up to 3 months. To store, transfer into an airtight container (which is freezer-friendly if freezing).
- To reheat – you can place in the microwave and warm for 20-30 seconds.
- To defrost from frozen – allow to completely thaw in the fridge overnight before reheating. Then reheat in microwave for 20-30 seconds, until warm to touch.
How to serve
These matcha brownies can be served warm with an Americano, iced coffee or matcha latte (for the ultimate matcha boost). Alternatively serve with fresh juices, masala chai or almond milk!
