What is Sourdough Bread?
- Sourdough bread is a type of bread that is made using a special mixture called a "sourdough starter".
- This is a mixture of flour and water which naturally ferments over time.
- This process takes longer than regular bread and is what gives sourdough bread its unique taste and flavor. Sourdough bread has a crispy crust and soft, chewy inside with a tangy flavor.
- Sourdough bread can be stored at room temperature, in the fridge or freezer.
Notes on Recipe Ingredients
- Pistachio paste: homemade or store-bought. If you are using store-bought, look for pistachio butter/paste made using 100% pistachios only, with no added sugar/oil. This is because many jars of pistachio paste can have added refined sugar and oils.
- Maple syrup: for best results I recommend grade A refined sugar-free maple syrup.
- Sourdough bread: use fresh bread. Toast sourdough before adding the pistachio spread. Avoid using stale bread.

What is Sourdough Starter Discard?
When bakers make sourdough starter (or active sourdough starter), sometimes they can have extra sourdough starter which is known as "sourdough discard".
Many sourdough bakers use this extra mixture in other sourdough desserts and other recipes.
This is a great way to experiment and prevent food waste. Some sourdough discard recipes including pancakes, muffins and sourdough bread.
More sourdough dessert recipes (using sourdough starter discard) include:
- cakes such as sourdough discard apple cake and sourdough chocolate cake;
- cookies such as sourdough chocolate chip cookies and sourdough sugar cookies;
- other sweet sourdough recipes such as sourdough brownies, sourdough cinnamon rolls and sourdough peach cobbler.
