Easy No-Bake Hazelnut Cookie Dough
Not only does this hazelnut cookie dough taste delicious, it is perfect when I am craving something sweet.
In fact… this hazelnut cookie dough recipe has become my go-to dessert and snack recipe when I am looking for a healthier treat!
This cookie dough brings together a delicious hazelnut flavor and the nuttiness of almond flour with sweetness of chocolate chips and maple syrup!
It is so simple… yet so good! When you want to whip up something quickly, using wholesome ingredients - I highly recommend this recipe!
Plus, it is no-bake (so cheaper than baking in a traditional oven) and no need to chill this cookie dough either!
This dessert is also gluten-free and dairy-free (if using vegan chocolate chips).
Notes on Recipe Ingredients
- Almond flour: use blanched almond flour, as a base for this cookie dough.
- Hazelnut butter: I use crunchy hazelnut butter (you can also use smooth). I recommend looking for hazelnut butter with no added palm oil, salt or sugar.
- Maple syrup: use Grade A 100% refined sugar-free maple syrup. This adds sweetness and a depth of flavor to this cookie dough.
- Chocolate chips: I use sugar-free vegan chocolate chips and recommend Mrs Keto Chocolate chips. I prefer using milk chocolate chips to dark chocolate chips.
How to Make No-Bake Hazelnut Cookie Dough
- Combine wet ingredients. In a large mixing bowl, add hazelnut butter and maple syrup. Mix to combine using a silicone spatula.
- Add the almond flour and mix to combine into a dough. Add the chocolate chips and mix to combine. Serve and enjoy!

Tips + Variations
- Mix well to combine: make sure you mix ingredients together to evenly combine them for the best taste and texture
- Hazelnuts: add in finely chopped hazelnuts for extra crunch!
- Nut butters: substitute with other nut butters (including almond butter and peanut butter). Note: this will change the taste and flavor of nut butters.
Storage tips
Store leftover cookie dough in an airtight container in the fridge for up to 5 days.
How to Serve
Enjoy this hazelnut cookie dough with a cup of tea (including peppermint tea or masala chai). This can also be enjoyed with hot coffee (or cold coffee).
