The scrumptious flavors of the tomato mixture perfectly pair with earthy and nutty roasted purple sweet potatoes in this dish! This is also a great way to enjoy the delightful flavors of bruschetta without the bread (plus less carbs). You can also use regular orange sweet potatoes in this recipe if preferred.
What do Purple Sweet Potatoes look and taste like?
- Purple sweet potatoes have a deep purple flesh and rich taste.
- They have a natural sweetness to them and a pronounced earthy flavor and hint of nuttiness.
- I find purple sweet potatoes are a little less sweet than regular sweet potatoes.
What are the Potential Health Benefits of Purple Sweet Potatoes?
Not only are these vibrant in color, purple potatoes are packed with nutrients including antioxidants, vitamin C, fiber and potassium.
Interestingly, purple sweet potatoes have higher levels of antioxidants than other sweet potatoes (and 150% more antioxidants than blueberries).
Antioxidants are helpful for the body to reduce inflammation and lower the risk of chronic diseases (such as heart disease).
Purple sweet potatoes have a lower glycemic index (GI) than regular potatoes. This means they provide more steady energy with less blood sugar crashes.

Notes on Recipe Ingredients
- Purple Sweet Potatoes: you can find these at many grocery stores or in the supermarket. Look for fresh and firm purple sweet potato (also labelled Okinawan sweet potatoes). This is different from a purple yam or Japanese sweet potatoes with white flesh. Wash thoroughly and peel before slicing.
- Olive Oil: I recommend extra virgin olive oil for added health benefits but you can use regular olive oil if preferred.
- Garlic: Fresh minced garlic enhances of the bruschetta mixture.
- Seasoning: including salt, pepper and balsamic vinegar.
- Tomatoes: use plum or cherry tomatoes (or Roma tomatoes) for the bruschetta mixture.
- Basil: for a fresh taste in the bruschetta.
- Onion: use red onion (for a sweeter taste).
Equipment
To make these you will need an air fryer. I recommend the Ninja foodi air fryer (this is a wide air fryer). If you have a smaller air fryer you may need to air fry the sweet potato slices in batches.
How to Make Purple Sweet Potato Bruschetta
- After washing and peeling the purple sweet potato, cut lengthwise into thin slices.
- In a mixing bowl, toss the purple sweet potato slices with olive oil, minced garlic (optional) and your preferred seasoning (salt and/or pepper) until evenly coated.
- Arrange the seasoned sweet potato slices in a single layer in a lined air fryer basket, ensuring they are not overcrowded or overlapping.
- Air fry at 200°C/400°F in a preheated air fryer for 10 minutes. Flip halfway to ensure even cooking.
- While the purple sweet potatoes are cooking, make the bruschetta mixture. In a bowl, mix together plum/cherry tomatoes, onion, basil, minced garlic, vinegar, olive oil and salt. Taste and adjust for salt according to preferences.
- Once cooked and crispy, remove the sweet potato slices from the air fryer and allow them to cool slightly before topping with the bruschetta mixture. Serve and enjoy!
Tips
- Line air fryer tray with parchment/baking paper (or a baking sheet): this will prevent the sweet potato slices from sticking to tray. Ensure the parchment/baking paper you use is heat-resistant (designed for baking).
- Parchment paper: I also recommend using white/light colored parchment paper compared with darker parchment paper (this can cause your baked goods to darken quickly and affect cooking time).
Serving tips
- Serve fresh for the best texture and taste.
- This dish can be enjoyed in different ways. You could have some sour cream on the side. For added indulgence, you can sprinkle with grated cheddar cheese or drizzle with a balsamic glaze before serving.
- Enjoy with roasted vegetable risotto, garlic breaded mushrooms and soup!
- Serve with salads including Mediterranean cucumber and tomato salad, beet salad, Mediterranean quinoa salad or mango and cucumber salad!
