2tablespoonMatcha green tea powder2 tablespoon = 12g
½teaspoonBaking powder
¼cupMaple syrupgrade A (refined sugar-free)
50gButter (unsalted)melted
½ tablespoonPure vanilla extract
2Eggsmedium or large
½ cup (or 70g)White chocolate chipsrefined sugar-free (plus more for drizzling - optional)
Instructions
In a large bowl, sift the almond flour, matcha powder and baking powder and whisk to combine together.
In another bowl, add the eggs, maple syrup and vanilla and whisk to combine. Pour in the melted butter and whisk again until combined.
Add the dry ingredients to the wet ingredients and use a spatula to combine (don’t overmix). Gently fold in the white chocolate chips.
Transfer the batter into a lined baking pan/tin. Bake in preheated air fryer (bake setting 170°C or 338°F) for 9 minutes or until cooked (a skewer inserted into the centre of the brownie should come out clean). See recipe notes to bake in the oven.
Once baked, allow the baking pan to cool slightly before removing the brownie onto a cooling rack (you can use the parchment paper to lift the brownie). Drizzle white chocolate over the brownie and slice into squares and enjoy!
Notes
Sift the dry ingredients – this helps to remove any lumps to the ingredients can fully combine with each other and the batter is evenly baked.
Slice brownie once cooled with a sharp knife – for cleaner slices of brownies, slice when brownies have cooled slightly using a sharp knife (with a smooth edge).
Use room temperature ingredients – as we are using melted butter in these brownies, it is important for the wet ingredients to be room temperature (if too cold the melted butter will form clumps). Therefore, allow ingredients to come to room temperature to help all ingredients combine easily. Alternatively, maple syrup can be warmed gently for 10-15 seconds in the microwave. If you are using eggs from the fridge, you can keep them in a bowl of warm water for a few minutes before using.
Oven vs air fryer - this matcha brownies recipe is made using an air fryer. You can also bake in a preheated oven at 180°C/356°F for 15 minutes (or until a skewer inserted into the centre of the brownie comes out clean). The baking time varies in the oven and air fryer. This is because air fryers use circulating air to move heat around and bake the food quicker than an oven.
