Why this Recipe Works
- Quick and easy – no need to wait overnight to make this chia seed pudding. This method is similar to our pineapple chia seed pudding recipe – which skips the step of waiting overnight for the pudding to form! So a great option if you want something quick and easy!
- Comforting, simple and delicious – classic and delicious flavors, made in a simple way
- Versatile and nutritious – this recipe works as a dessert, snack or sweet breakfast – made without using refined sugar! Apples are nutritious and rich in fiber and antioxidants. Plus chia seeds are a great source of protein, antioxidants and omega-3 fatty acids.
- Gluten-free friendly – this recipe contains ingredients which are naturally gluten-free. Always be sure to double check labels to ensure no cross contamination with gluten-containing food.
Ingredients You'll Need
- Apple: use Braeburn or gala apples, which are sweeter and bring a lovely apple flavor to this pudding. Leave apple skin on for more fiber in this recipe.
- Chia seeds: used to create a creamy pudding-like texture when mixed with the blended apple-milk mixture.
- Milk: Use dairy or non-dairy milk for creaminess. Almond milk keeps it vegan and light, while dairy milk adds richness.
- Cinnamon powder: for warmth to perfectly complement the apples
- Maple syrup: to sweeten the pudding and also whilst caramelizing the apples
- Vanilla extract: to enhance the flavor of the pudding. Look for pure vanilla extract (with no added sugar)
See recipe card for a full quantities.
Substitutions and Variations
- Coconut: Sprinkle toasted coconut flakes on top for added crunch.
- Milk options: Use coconut milk or almond milk to make this vegan-friendly. Regular dairy milk adds a richness to this pudding.
How to make
Step 1: Blend apple and milk. Start by cutting dicing half of the apple. Blend with ¼ cup of milk until smooth.
Step 2: Heat the apple and chia mixture. Pour the blended apple and milk mixture into a pan. Add chia seeds and ½ tablespoon maple syrup. Cook over medium-high heat, stirring continuously for about 3 minutes until the mixture thickens.
Step 3: Combine with cinnamon milk. Blend the remaining ¼ cup of cold milk with cinnamon and vanilla extract until smooth. Add in the apple chia mixture and stir until well combined. Transfer into a glass and place in the fridge.
Step 4: Caramelize the remaining diced apples. Dice the remaining half of the apple into small chunks. Heat a pan and add the apples with ½ tablespoon water, cook for a few minutes on medium-high heat. Add ½ tablespoon maple syrup and ½ teaspoon vanilla, stir to coat the apples and cook for another 2 minutes or until caramelized.
Step 5: Add caramelized apples on top of the pudding and place back in the fridge for at least 20 minutes or until ready to serve. Garnish with a sprinkle of cinnamon before serving and enjoy!
Expert Tips
- Keep stirring: Continuously stir the chia mixture while heating to prevent clumping and create a creamy texture.
- Blending the apple chunks: Blending the diced apple chunks with the milk infuses a sweet, fresh apple flavor into the chia mixture. This enhances the taste and provides a way to naturally sweeten the pudding.
