This apple and cinnamon chia seed pudding is delicious, comforting and so simple to make! This easy recipe brings together the cozy combination of apples and cinnamon – perfect for breakfast, dessert or a warming snack!
Blend half of the diced apples with ¼ cup of milk until smooth.
Pour the blended apple and milk mixture into a pan. Add chia seeds and ½ tablespoon maple syrup. Cook over medium-high heat, stirring continuously for about 3 minutes until the mixture thickens. Remove from heat and set aside.
Blend the remaining ¼ cup of cold milk with cinnamon and vanilla extract until smooth.
Add in the apple chia mixture and stir until well combined. Transfer into a glass and place in the fridge.
Heat a pan and add the remaining half of diced apples with ½ tablespoon water, cook for a few minutes on medium-high heat. Add ½ tablespoon maple syrup and ½ teaspoon vanilla, stir to coat the apples and cook for another 2 minutes or until caramelized.
Add caramelized apples on top of the pudding and place back in the fridge for at least 20 minutes or until ready to serve. Garnish with a sprinkle of cinnamon before serving and enjoy!
