Whether you are looking for a post-workout refreshment or a healthy fresh juice or green smoothie, this kale cooler is the perfect choice. This refreshing and sweet kale smoothie recipe is so quick and simple to make!
I have fully embraced the green goodness of this drink and it has been the perfect addition to my collection of best green juice recipes… The perfect combination of sweet from fresh fruit perfectly balanced with leafy greens (curly kale), cooling cucumber and celery and some zesty fresh lemon juice!
It is like having a kale salad as a drink with all the health benefits!
This vibrant drink is filled with nutrients including vitamins, minerals and powerful antioxidants (such as vitamin C and vitamin K). Antioxidants are beneficial as they help to reduce inflammation in the body.
This drink is a great way to boost your immune system and can simply be made using a blender. This is one of my go-to recipes to feel refreshed and hydrated - and add a dose of nutrients for a healthy diet.
This kale cooler is inspired by the Egg & I restaurant as well as the First Watch kale tonic recipe. This version includes healthy greens (raw kale), cucumber, celery and a combination of apple and pear and fresh lemon juice for a fresh tasting drink! On a day where I am looking for something nutritious and cooling this would be my favorite juice recipe!

What you need to make Kale Cooler
You need a few simple ingredients to make this delicious drink:
- Kale: I recommend using curly kale, wash the fresh kale leaves before adding to blender.
- Apples: you can use any type of apples including Gala, Braeburn or Fuji apples. For more tartness you can use Granny smith/green apple varieties.
- Cucumber: add a cooling effect in this drink.
- Juice of a fresh lemon: this brings a zesty and refreshing taste to the drink. I recommend using the juice of a fresh lemon. You can also substitute with fresh lime juice if preferred.
- Pear: pear brings a unique taste and great addition to this drink! Pear enhances the sweetness of the drink and perfectly complements the cucumber, celery and kale.
- Celery: I recommend using organic celery sticks.
- Water and Ice: water helps to blend ingredients together and ice cools the drink down.
Tip: slice the apples and pear and chop the cucumber and celery into smaller pieces so it is easier to blend the ingredients together.

How to Make this Kale Juice Recipe
- Add lemon juice and water to the blender, followed by the curly kale, sliced apples and pear and chopped cucumber and celery.
- Blitz into a smooth juice. Secure lid firmly onto blender and blitz using the juice setting on your blender, for 30 seconds - 1 minute, or until juice is smooth with no chunks. Serve and enjoy!
Equipment
To make this fresh juice, all you need is a blender – I recommend the Blendtec or Ninja blender. These blenders have a number of blending cycles and allows you to adjust blending.
Tips to Make the Perfect Glass of Fresh Juice
- Adjust the water as desired – the water content can vary in some fruit and vegetables, therefore you may wish to add more water after blending to make the juice thinner.
- Use a good blender – it is important to use a good functioning blender to blitz the fruit and vegetables into smooth juice.
- Add ice – this will cool down the temperature of the juice (as the motor of the blender will warm up the drink)
- Adjust as desired – if you prefer a sweeter drink, you can add more apples or pear.
Variations
This drink can be adjusted according to taste:
- Milk or coconut water: for a creamier taste substitute water with almond milk or regular milk. You can also substitute water with coconut water.
- Fruits: you can add your favorite fruits in this drink – including watermelon, strawberries or blueberries.

Ingredients
- 2 cups Curly kale
- 2 apples Braeburn, gala or fuji, sliced
- ½ cucumber chopped
- ½ lemon Juice of ½ lemon
- 2 celery stalks chopped
- 1 pear sliced
- ¼ cup water
- 1-2 ice cubes
