This is garlic bread with a twist - using sourdough bread as the base!
Lately I have been using sourdough in recipes - after learning about the potential health benefits of fermented foods (for more about this check out our sourdough french toast recipe).

This recipe is made using simple ingredients. Sourdough bread is the base for this garlic bread, which is topped with a garlic and herb buttery mixture and toasted to perfection!
This garlic sourdough bread recipe is different from traditional garlic bread as it has a unique sourdough flavor which perfectly pairs with a range of herbs.

What is Sourdough Bread?
- Sourdough bread is a type of bread made by fermenting dough naturally over a period of days before baking into a sourdough loaf.
- Interestingly, the fermentation of sourdough is slower than other types of bread.
- The long fermentation time contributes to the unique flavor, texture and taste of sourdough bread.
- Many people have their own sourdough starter (combining flour and water and allowing to ferment) to make a fresh loaf of sourdough bread.
- Sourdough bread can be stored at room temperature (if you are in a cooler region) or in the fridge (or freezer). For maximum freshness, I prefer storing sourdough bread in the fridge.

Sourdough bread can offer many potential health benefits, mostly due to the fermentation process. These include:
- Digestibility – the fermentation process breaks down gluten and phytic acid, which can make sourdough bread more digestible for many individuals. You can also look sourdough can be made using gluten-free ingredients.
- Nutrient absorption – fermentation also increases bioavailability (accessibility) of nutrients which helps to improve absorption of nutrients in the body including minerals, vitamins and phytochemicals.
- Healthier gut – beneficial bacteria (probiotics) are introduced in the fermentation process which can help support a healthy gut.
- Blood sugar control – sourdough bread has a lower glycemic index compared with other types of bread, which can potentially help to control blood sugar levels.

Notes on Ingredients
- Sourdough bread: you can use homemade sourdough bread slices or buy from the grocery store/supermarket. Use fresh sourdough for the best results. Sizes of sourdough can vary; this recipe is for 4-6 small/medium slices. If you have a larger loaf of sourdough you can double the batch of garlic herby butter or make fewer slices as preferred.
- Salted butter: for flavor and richness.
- Olive oil: I prefer to use extra virgin olive oil (for the extra antioxidant properties), this adds depth of flavor when toasting the garlic bread.
- Garlic: 1-2 cloves of garlic, minced. I recommend starting with 1 garlic clove and tasting the mixture. You can add more minced garlic (another clove) if desired. I prefer fresh garlic vs garlic powder for the best flavor.
- Seasoning: including dried herbs (oregano and parsley), you can also add more seasoning including fresh rosemary/dried rosemary, chives and garnish with fresh parsley.
Equipment
You will need a large non-stick frying pan to toast the sourdough garlic bread. I also recommend using a silicone brush to help evenly spread the buttery mixture and a spatula to flip the garlic bread.

How to Make Sourdough Garlic Bread
- Make the garlic butter mixture and brush onto sourdough. In a small bowl, melt the butter (or soften) and add herbs and minced garlic. Mix to combine. Brush sourdough bread with buttery mixture. You can brush double sided for extra indulgence!
- Toast on preheated pan on low-medium heat for 5-7 minutes, or until crispy and golden brown.
- Flip to toast the other side. Cook for another 5-7 minutes or until crispy and golden brown. Garnish with fresh parsley (optional), serve and and enjoy!
Tips for making the Best Sourdough Garlic Bread
- Preheat pan on low heat: this helps to toast the garlic bread evenly and give it a crispy texture without overcooking it.
- Brush evenly: Ensure entire surface of bread is brushed with the butter mixture so every bite is bursting with incredible flavor!
- Use fresh sourdough: use fresh sourdough (which is not stale or dry), for the best taste and texture.
Variations
- Mix and match: you can adjust the herbs to your liking. For a more complex flavor profile, add rosemary, chives and red chilli/pepper flakes.
- Cheesy sourdough garlic bread: add shredded mozzarella cheese or cheddar cheese for a cheese garlic bread.
- Fresh herbs: you can also garnish with herbs including fresh parsley for extra flavor and color!
- Oven: if you prefer to toast bread in the oven, place the buttery sourdough garlic bread on a baking tray and bake until crispy and golden.
How to Serve
This sourdough garlic bread is a delicious appetizer or perfect side dish alongside ratatouille, ratatouille spaghetti or simple tomato spaghetti.

- 4 medium slices Sourdough bread (or 6 small slices)
- 25 g Butter (salted)
- 1 Garlic clove minced (2 cloves for a stronger taste) (using a garlic press or mincer)
- ¼ teaspoon Dried oregano or more to taste
- ¼ teaspoon Dried parsley or more to taste
- ½ teaspoon Olive oil extra virgin olive oil
- Pinch Black pepper (freshly ground) optional
- Optional Fresh parsley (chopped and garnished on top)
