These air fryer purple sweet potato fries are simple and quick to make and taste delicious! These fries are bursting with nutrients including antioxidants and are a great option for a healthy side dish, snack or appetizer!
¼teaspoonGarlic (minced) ¼ teaspoon more for stronger flavor

⅛teaspoonsaltplus more to taste (seasoning)
Instructions
Cut the washed and peeled purple sweet potatoes into fries (fry-shaped sticks).
In a bowl, toss the sweet potato fries with olive oil, salt and minced garlic and herbs until coated evenly.
Preheat air fryer to 200°C/400°F.
Arrange coated fries in a single layer into the lined air fryer basket (see notes). Air fry for 10 minutes on 200°C/400°F, flip halfway to ensure even cooking.
Once cooked, remove from air fryer tray, sprinkle more salt to taste. Serve fresh and enjoy!

Serve fresh with your favorite dipping sauce: serve these fries straight way for the best taste and texture.
Line air fryer tray with parchment/baking paper (or a baking sheet): this will prevent the sweet potato fries from sticking to tray. Ensure the parchment/baking paper you use is heat-resistant (designed for baking).
Parchment paper: I also recommend using white/light colored parchment paper compared with darker parchment paper (this can cause your baked goods to darken quickly and affect cooking time).
Arrange in single layer: Ensure the tray is not overcrowded and fries are not overlapping. You may need to air fry in batches (depending on the size of your air fryer).
