Bruschetta Mixture
¾cupPlum tomatoes (or cherry tomatoes)chopped
2tablespoonRed onionchopped
10Fresh basil leaveschopped

Instructions
After washing and peeling the purple sweet potato, cut lengthwise into thin slices.
In a mixing bowl, toss the sweet potato slices with olive oil, minced garlic (optional), and your preferred seasoning until evenly coated.
Arrange the seasoned sweet potato slices in a single layer in a lined air fryer basket, ensuring they are not overcrowded or overlapping.
Air fry at 200C/400F in a preheated air fryer for 10 minutes. Flip halfway to ensure even cooking.
While the purple sweet potatoes are cooking, make the bruschetta mixture. In a bowl, mix together plum/cherry tomatoes, onion, basil, minced garlic, vinegar, olive oil and salt. Taste and adjust for salt according to preferences.
Once cooked and crispy, remove the sweet potato slices from the air fryer and allow them to cool slightly before topping with the bruschetta mixture. Serve and enjoy!
