You can enjoy this recipe using homemade naan (or store-bought naan). I recommend our plain naan or whole wheat naan for this recipe – as these complement with the cheesy mushroom mixture!

Notes on Ingredients
- Garlic: minced fresh garlic cloves for the best flavor.
- Mushrooms: this recipe uses button mushrooms (you can use white or brown mushrooms, cremini mushrooms or shiitake mushrooms if desired).
- Olive oil: for richness and flavor, to sauté the mushrooms.
- Seasoning: including freshly ground black pepper, dried rosemary and chives. This enhances the flavor of the mushroom mixture.
- Milk: you can use semi-skimmed/2% or whole milk.
- Cheddar cheese: this recipe uses shredded/grated cheese (you can use a box grater to shred cheese). The cheese enhances the flavor of these garlicky mushrooms for the best taste. Garlic with cheese are a classic pairing to bring amazing flavor to these mushrooms.
- Ground almonds/almond flour (optional but recommended): I recommend adding ground almonds/almond flour to thicken the mushroom mixture and add a subtle nutty flavor. This is a great way to enhance the taste of the mixture whilst adding nutrients too!
- Naan or flatbreads: you can use homemade naan, whole wheat naan or store-bought naan bread/store-bought flatbread for this recipe.
Note: this recipe does not use salt as the cheddar cheese provides saltiness (you can add a pinch of salt if desired).
How to make Cheesy Garlic Mushrooms
- Dry roast mushrooms in large/medium non-stick pan/large skillet on medium-high heat for 5 minutes. You will notice the mushrooms releasing moisture and becoming softer and golden brown.
- Add oil, garlic and sauté mushrooms for 40 seconds.
- Add seasoning. Add the rosemary, chives and freshly ground black pepper and cook for another 20 seconds.
- Add milk, cheese and almond flour/ground almonds. Pour in the milk and mix with mushrooms. Add in the shredded/grated cheese and mix to coat evenly. Cook on medium heat for 2-3 minutes, allowing the mushroom mixture to thicken and become creamy. Add almond flour and cook for another 2-3 minutes, or until thickened and creamy. Remove from heat.
How to Assemble Mushroom Flatbread
- Warm the naan/flatbread in the grill or microwave for a few seconds, or until warm. Place flatbreads/naan onto a plate and heat for a few seconds in the microwave. Alternatively, place onto a medium/large baking sheet and heat in the preheated hot oven/grill until warm.
- Spread mixture across surface of naan/flatbread. Using a spoon, spread a single layer of mushrooms on top of the flatbreads/naan. Serve fresh and enjoy!

Top Tips
- Use fresh naan – for the best results use freshly made naan – which is soft and thin.
- Slice mushrooms and roast before adding oil and garlic – roasting mushrooms releases moisture for the best flavor.
- Use fresh garlic – I prefer using fresh cloves of garlic (compared with garlic powder) for the best flavor. The garlic flavor complements mushrooms and cheese in this recipe.
- Cook mushroom mixture - adjust cooking time depending on size of your burner hob. Cook mushrooms until they thicken and become creamy.

- Seasoning: You can also add other seasonings/spices including dried oregano, fresh thyme and red pepper flakes/red chilli flakes.
- Tangy taste: For a tangier taste add a little bit of balsamic vinegar (approx. ½ tsp, add with the seasoning) or drizzle with a balsamic glaze.
- Cheese: you can also garnish with other kinds of cheese including mozzarella cheese (for extra indulgance).
