Instructions
In a stick blender, or food processor, add the tomatoes, coriander, red onion, red jalapeño pepper / green chilli, salt and lemon juice.
Blend until salsa is smooth, taste and add more salt or lemon juice if needed (as this will depend on the sweetness of the tomatoes).Serve immediately or store in an air-tight container and refrigerate.
Notes
Use ripe cherry or plum tomatoes: For the best taste, we recommend using fresh ripe cherry or plum (aka Roma) tomatoes – we prefer using these smaller tomatoes to the regular (larger) tomatoes – these are sweeter and tangier than the latter and give a garden-fresh and juicy taste – perfect for this fresh blender salsa.
Storage Tips: This fresh blender salsa can be served immediately or stored in an air-tight container and refrigerated for up to 2 days.
Adjust as desired: based on the sweetness level of tomatoes and personal preferences you may wish to adjust the level of salt, lemon juice and chillies in this salsa.
