I absolutely love the different ways I can use eggs in my recipes for breakfast.
Eggs are a great way to incorporate a powerhouse of nutrients into my morning meal. I enjoy starting my day with a range of these easy, quick, tasty and convenient egg recipes.
From simple scrambled eggs, veggie omelettes to soft boiled eggs and poached eggs – there are so many options!

Eggs are a constant in many households (like mine) and bring comfort, warmth and delicious flavor to so many dishes!
Not to mention their function in baking… from binding ingredients together to adding moisture and air for that perfect cake crumb – eggs a truly a magic culinary ingredient!
Health benefits of eggs
- Eggs are rich in many nutrients including protein, which is essential for growth and muscle development and repair.
- Eggs are a source of vitamins including B-complex vitamins such as B12 and riboflavin, which are essential in energy production.
- Eggs also have choline which is important for brain health and memory.
- In addition, eggs are a source of antioxidants including lutein and zeaxanthin. These antioxidants help promote eye health.
Egg-tastic recipes for everyone
Now that we have celebrated the wonders of eggs and covered their nutritional benefits – let us go on a fun egg-cellent journey exploring various egg dishes and recipe ideas for breakfast (and lunch/dinner or a snack).
You can use any size eggs for these recipes. I would recommend medium or large eggs (if you are in Europe). If you are in the US/Canada - I recommend using large eggs (see notes below in egg tips section).
Here we dive into a collection of fresh and delightful egg recipes – showcase the versatility and wonder that eggs bring to the (dining) table!
1. Classic scrambled eggs
Starting with the classic dish – scrambled eggs are a simple and scrumptious dish!
This can be whipped up in less than 15 minutes (cooking time less than 10 minutes depending on how you like your eggs)! To make these you just need a mixing bowl, your ingredients, a pan and spatula!
These eggs are a comforting breakfast dish and can be adjusted according to taste!
Season with salt and pepper or garnish with cheese or fresh coriander/cilantro with fresh pico de gallo, blender salsa or guacamole.
2. Veggie scrambled eggs
Fancy incorporating more veggies into your scrambled eggs?

How do you like your fried egg?
Most people I know love the gooey yellow centre of those runny yolks in a fried egg... served on top of warm buttered toast. On the other hand, I like my fried egg well done with a firm yellow yolk – am I the only one?
Whether you serve sunny side up or prefer a fully cooked fried egg – you only need a few minutes to make this simple dish! Once cooked, place on a paper towel to drain excess oil.
Serve on top of delicious avocado toast or tomato toast with a sprinkle of black pepper or chilli flakes.
Add a glass of fresh apple, carrot and orange juice (or orange and passion fruit juice) for an incredibly healthy and wonderful start to your day!
4. Green eggs
Imagine a unique twist on scrambled eggs! These green eggs are a perfect and fun adaptation of the classic scrambled eggs. The vibrant green hue in this recipe is natural and believe it or not… comes from fresh spinach!
This dish is a wonderful way to add a splash of green goodness into your morning meal (and sneak in some spinach for the kids).
I love serving these green eggs with pico de gallo salsa or blender salsa and guacamole for a colourful breakfast.
5. Veggie green eggs
The colour doesn’t stop here… this dish takes our green eggs to another level with added veggies!
This colorful dish has a lovely symphony of color, texture and flavors. The eggs are enhanced by the fresh vegetables which are sautéed in the pan before adding the whisked eggs.
6. Omelette
Omelettes (or omelets) are an amazing, satisfying and simple dish – perfect no matter what time of day! I love how versatile omelettes are!
Whether you want a simple garlic omelette, spicy cheesy omelette or a mega veggie omelette – you can mix and match as desired.
Customise your fillings with the combination of ingredients that tantalise your taste buds.
My favorite is veggie omelette filled with cheese!
7. Sweet treats including cakes, pancakes and muffins
- Eggs can also be added to cakes, brownies, pancakes and cupcakes/muffins to help with the structure, moisture and overall taste of these sweet treats.
- In particular, eggs act as a binding ingredient.
- This helps if you are looking to bake regular or gluten-free recipes including pancakes and crêpes. These are great sweet breakfast recipes which are healthier sweet alternatives to many store-bought varieties.
- Eggs are also added in cakes and cupcakes for binding and to help them rise.
- Whipped fluffy egg whites are also used to add air to cake batters. This gives you a light and fluffy cake crumb which is also moist.

8. Egg sandwiches and other egg recipes
Sandwiches can be a satisfying, quick and simple meal. Add fried egg between two slices of bread or buns, with cheese, condiments and desired fillings for an egg roll/muffin.
Alternatively, mash boiled eggs between slices of fresh bread with mayonnaise and cress for a delicious egg and cress breakfast sandwich.
Other egg recipes include boiled eggs, poached eggs and huevos rancheros (also known as ranch eggs).
Egg tips
- Size and number of eggs: eggs have sizes (ranging from small to extra large), based on the size of the eggs you are using you may have to adjust the number of eggs in a recipe. Egg sizes also range based on region. In the US and Canada, eggs which are approx 56-57g are labelled large eggs, whereas in Europe, large eggs are considered to weigh approx 63-73g.
- Cook time: when making dishes including scrambled eggs, cooking time can affect the texture of the eggs. Eggs cook fairly quickly - adjust cooking time according to your desired consistency (e.g. as a cooking guide - for smooth moist scrambled eggs opt for a shorter cooking time. Increase cooking time slightly for firmer scrambled eggs).
- Low-medium heat: when cooking eggs including fried egg, scrambled eggs or omelette, the ideal cooking temperature/heat is low-medium heat for the best texture. Cooking eggs on high heat can cause them to dry up.
- Dips and garnishes: Many of these egg dishes can be served with a number of dips for the best flavor including pico de gallo, blender salsa and guacamole. Plus garnishes including cheddar cheese and herbs.
- Egg whites vs whole eggs: for a lighter morning breakfast you can use egg whites in some recipes (including scrambled eggs) instead of whole eggs.
Note: egg-tastic is also a ceramic microwave egg cooker and poacher which is used for cooking eggs without using a pan. This includes a ceramic pot/ceramic cooker with a vented lid.
