Ingredients You'll Need
- Eggs – I like to opt for organic, free-range eggs. Egg sizes can vary based on region - if you are in the US/Canada/Australia use large eggs for this recipe. If you are based in Europe, you can use either medium or large eggs. Whole eggs are the base of these scrambled eggs and are blended with the spinach before being added to the pan to be cooked.
- Spinach – you can use fresh or frozen spinach for this dish. Spinach is a great source of nutrients, plus gives these eggs their magical green color.
- Cheddar cheese – we recommend cheese for extra indulgence, making this dish creamier and satisfying.
- Olive oil or butter – Using olive oil/butter helps to make the eggs extra moist, creamy and soft. Note: if you are using salted butter, avoid adding salt.
- Seasoning – salt (optional) and pepper are added to season the eggs.
Equipment
- You will need a small stick blender or food processor to blend the spinach and eggs. You can use a variety of food processors including nutribullet, vitamix or blentec.
- I recommend using a non-stick medium/large pan to help evenly cook these eggs without them sticking to the surface of the pan.
- I also recommend using a silicone spatula to help you lift, fold and mix the eggs to cook and stir them.

How to Make Green (spinach) scrambled eggs (detailed step-by-step)
- Add eggs and spinach into food processor and blitz (images 1-3). Crack eggs into the stick blender, add spinach and seasoning and blitz for 1 minute, or until all ingredients are combined, giving you a green liquid.
- Add cheese (image 4). Add a handful of grated/shredded cheese and using a fork, gently whisk into the egg mixture.
- Heat oil or butter in a pan (image 5). Heat a pan on medium heat and add oil or butter to heat for 30 seconds (if using butter, heat until the butter has melted, then move onto next step)
- Pour out egg mixture and cook until desired consistency (image 6-8). Pour the green egg mixture into the pan. Using a silicone spatula, continuously stir the eggs and cook for 6-8 minutes or until desired consistency. You will notice the eggs start to thicken as they cook. Use the spatula to gently lift and fold the eggs from the sides and base of the pan to stir and evenly cook the eggs. Once cooked to desired consistency, remove pan from heat and serve.

- Alternatively, if you want to turn this into a brunch feast – serve alongside with toasted sourdough bread and crispy hash browns or avocado toast.
- These eggs go perfectly with a glass of our fresh apple, orange and carrot juice!
Storage Tips
- To store leftovers (or to make in advance): transfer eggs into an airtight container and store in fridge (once cooled to room temperature) for up to 1 day.
- To reheat: place in pan, cover and cook on low heat for 5-7 minutes, stirring intermittently. Alternatively, heat eggs in a microwave-safe dish/bowl for a few minutes (or more depending on quantity), until eggs are steaming. When reheating the eggs, cover with a microwave-safe lid to prevent them from drying out.

- ¼ cup shredded/grated cheddar cheese
- 1 teaspoon butter or oil
- ¼ - ½ teaspoon black pepper
