Notes about recipe ingredients
- Avocado: this is the star of this show – from its delicious velvety and nutty taste and the vibrant fresh green colour – to the myriad of health benefits it provides. I cannot resist avocados… I will always love and celebrate this unique food! Avocados provide us with nutrients including vitamins, minerals, fibre, antioxidants and healthy fats. I recommend using ripe avocados to get the perfect taste and texture.
- Green chillies or Red jalapeño peppers: Depending on preferences you can either add a green chilli or red jalapeño pepper for spice. For an all-round hint of spice, green chillies are great – plus easily accessible. Alternatively, for a spicier kick with a slight sweetness you can add red jalapeño (or red chilli pepper). This taste adds to the overall flavour of the guacamole! Intriguingly – red jalapeño peppers are more “mature” compared to their green jalapeño pepper counterparts – red jalapeño peppers are left on the vine for longer – resulting in them ripening and consequently developing more capsaicin (the compound that makes the jalapeño spicy). This ripening process not only results in a spicy red jalapeño but also adds to the health benefits of the jalapeño – with an increase in vitamins, antioxidants and capsaicin.
- Red onion: we love adding some red onion (in addition to spring onions) to enhance the flavours in the guacamole – plus red onions are rich in nutrients including vitamin C (antioxidants) and B vitamins.
- Coriander (or cilantro): our secret ingredient – we love this herb for it’s refreshing fragrance and taste. The addition of coriander takes the guacamole to new heights and is a must!
- Seasoning: Lemon juice and salt are used as seasoning to enhance the flavours and work together to perfect this recipe.
- Note: Authentic guacamole recipes do not include tomatoes – tomatoes have a tendency of giving a “salsa” twist to the dip – nevertheless can be added according to taste!
- Optional - you can add a sprinkle of chopped spring onions/scallions for extra flavour.
Lemon juice vs lime juice
- Interestingly, many chefs recommend omitting the use of lime in guacamole to respect the flavour of the avocados.
- Although lime juice may be used for a citrusy flavour, its bitter taste tends to mask the avocado. I prefer using fresh lemon juice in guacamole as I prefer the lighter, sweeter and citrusy taste of lemon over the somewhat bitter taste of lime.
- Nevertheless, many people prefer lime juice to lemon juice and this recipe can be easily modified according to taste.
How to Make Guacamole
- Add ingredients in a medium bowl. Cut and scoop out the avocados, add the chopped red onions, coriander, (spring onions if using), lemon juice and salt.
- Mash until smooth (or as desired). Using a masher, gently mash the avocado, whilst also mashing the other ingredients into the avocado, until smooth (or desired consistency).
- Taste and serve. Taste to check for salt and lemon, adjust as desired. Serve with your favourite snack or meal and enjoy!

Tips to make the Perfect Guacamole dip
- Select fresh and perfectly ripe avocado: selecting perfectly ripe avocado for your guacamole is key to make a dip that is flavourful with the right texture. To check for ripeness, using your thumb and fingers gently press the avocado, if it is hard then it is not ripe – this means the avocado will be difficult to peel and mash as well as lacking the right flavour and texture for this dip. Alternatively, if the avocado is very slightly soft when applying pressure, it is ripe and will be easy to cut, peel and mash – plus will give you a wonderful avocado flavour and texture that is just right for this dip. In some cases, avocados can be overripe – in this case cut and peel as usual and check for any black/brown spots or marks – avoid using part of the avocado with black or brown spots.
- Use fresh ingredients: for the best results, make sure to select the freshest ingredients. When selecting onions and green chillies ensure they are firm to touch. You want to ensure the onions you select are dry, fully coloured with no patches and soft or dark spots. When shopping for coriander or cilantro – look for bunches which are vibrant, green and uniform in colour with a fresh aroma.
- Use a masher: this makes it easier to mash the guacamole (compared with a fork), and helps release the flavour of other ingredients.
- Chop the onions and coriander/cilantro finely: this helps to release the flavour of to make this guacamole extra tasty.
Tips for Storage
Guacamole is best served immediately for maximum freshness and taste. If you happen to have leftovers you can store in an airtight container with a layer of cold water on top.
Guacamole can go brown if left out and exposed to air. This is because the avocado oxidises when it comes into contact with the air and the dip changes colour.
After trying so many different tricks and technoques (from lemon juice to plastic film, paper towels to oil)... using water has been the best option!
How to store
- Pack guacamole in an air-tight container and ensure there is no trapped air.
- Flatten the guacamole and add some cool water to form a thin layer on top of the guacamole.
- Seal your container and place in the fridge.
- Gently pour out the water on top and be amazed at the vibrant green guacamole that remains! Once you have removed the water, we recommend stirring the guacamole and adding salt and lemon juice to freshen up the guacamole.
FAQ
To cut and peel an avocado, start by slicing open the avocado in half lengthwise. Use your hands to twist the avocado to open. One half of the avocado will have the pit – you can use your fingers, a knife or a spoon to remove the pit.
Using a spoon (or your fingers!), scoop out the flesh of the avocado from both halves and place in your bowl (you don’t need to chop the avocado in this recipe).

Guacamole (Quick and Easy Smashed Avocado Dip)
Ingredients
- 3 avocados (medium) (peeled and pitted) use ripe avocados
- 1 green chilli (finely chopped) or red jalapeño
- 1 ½ tablespoon fresh coriander/cilantro (finely chopped)
- 1 tablespoon red onion (finely chopped)
- ½ tablespoon lemon juice (fresh or bottled)
- ⅛ teaspoon salt (or to taste)
Instructions
- In a large bowl, add the green chilli, coriander and red onion and roughly mix. Add the avocado flesh, lemon juice, salt and pepper.
- Using a masher, mash all ingredients to desired texture. For a chunky texture – roughly mash for less than a minute, for a smoother texture – mash everything until all ingredients are combined together (1-2 minutes).
- Give a final mix and taste test to add extra salt or lemon juice as desired. Serve immediately and enjoy!

This guacamole is a basic version – many additional ingredients can be added for different taste including garlic, tomatoes, sweetcorn and red peppers. Lime can be used instead of lemon for a more pungent citrusy taste.
