Instructions
Add the chopped coriander, spring onions, red onions and red jalapeño (if using) into a medium bowl.
Slice the avocados in half and scoop out the avocado flesh and add into the bowl. Add the salt, black pepper and lemon juice.
Using a masher, mash the avocado mixture until creamy and smooth, or until desired consistency. Remove the masher from the bowl (use a spoon to scoop up any avocado from the masher and transfer into the bowl).
Using your spoon, give the avocado mix a final stir.
Toast your bread until golden and crispy, spread with salted butter and then spread the avocado mix. Garnish with microgreens (optional). Serve and enjoy!
Notes
Use fresh bread – I love (and recommend) using sourdough bread as the best bread for this recipe. I also enjoy using homemade Italian bread but you can use any type of bread for this recipe. Homemade or store-bought bread including whole grain bread/whole wheat bread or seeded bread also work well. Ensure your bread is fresh (good sourdough bread is soft and crusty - and not stale).
Toast and butter the toast– this is a secret trick to making this avocado toast stand out, toast the bread well so it offers a crispy base and butter the toast with slightly salted butter before spreading the avocado mix – this adds a richness to the dish which takes it to another level!
Mash the avocado mix – use a potato masher to mash all the ingredients together in a bowl. This helps the avocado mix to become creamy and releases the flavour of the other ingredients and herbs to season.
Spread generously and serve immediately – top your crispy, buttered and toasted bread with a generous helping of this creamy avocado mix and spread across the entire toast so every bite is as wholesome and enjoyable as the next! Serve immediately as the toast is still crispy – if you leave it for too long then the toast will start to soften!
