Potential Health Benefits of Broccoli
- Broccoli is an excellent source of nutrients including vitamins A, C and K, which contribute to overall health.
- In addition, broccoli contains minerals such as calcium, potassium and iron as well as many antioxidants. Antioxidants are important in helping prevent cell damage and reduce the risk of chronic conditions.
- Broccoli is also high in fiber, which is important for digestive health.
Notes on ingredients
- Broccoli: Fresh broccoli florets are used in this recipe, these give a satisfying crunch to this stir fry. Break the broccoli head into small florets for easy cooking and maximum flavor.
- Garlic and ginger: for flavor, warmth and depth.
- Cashew Nuts: Whole cashew nuts bring another layer into this stir fry. These are roasted to enhance their flavor.
- Dark Soy Sauce: for color and a rich umami flavor to the stir fry.
- Oil: I recommend using a combination of sesame oil and olive oil. Sesame oil brings a nutty and unique flavor into this stir fry.
- Sesame Seeds: for garnish and added texture.
- Water: to help the broccoli to cook evenly and tenderize.

To make this dish, you'll need a non-stick wok and wooden spoon to stir fry the ingredients.

Tips for the best stir fry
- Heat the oil in your wok: Ensure your wok preheated with oil before adding the remaining ingredients to get the perfect stir fry.
- Don't overcook the broccoli: the broccoli should be tender whilst still maintaining a crunch.
- Adjust seasoning to taste: this recipe does not include added salt as soy sauce has salt. Depending on the brand of soy sauce used, you may wish to season with more salt. You can also add red pepper flakes/chilli flakes, black pepper or more garlic as desired.
- Adjust cooking times: based on whether you are using an induction cooktop or gas burner hob, adjust the time to cook the ingredients. Induction cooktops maintain more heat, resulting in quicker cooking times.
Storage Tips
Store any leftovers in an airtight container in the refrigerator for up to 2 days. Before serving, reheat until hot using a pan or in the microwave.
