Pico de Gallo/salsa: Add the tomatoes, garlic, green chili, red onion, coriander, salt, and lemon juice in a food processor. Pulse until semi-chunky consistency or for longer (for a smoother consistency). Taste and adjust seasoning as desired.
Prepare Sweet Potato Slices
Preheat air fryer to 180°C (356°F).
Toss sweet potato slices with olive oil, salt, and pepper.
Spread slices in a single layer in a lined air fryer basket.
Air fry for 7-10 minutes, or until sweet potato slices are cooked, shaking the basket halfway through. (See notes)
Sprinkle grated cheddar cheese over crispy sweet potato slices.
Return to air fryer and cook for an additional 2-4 minutes, until cheese is melted and bubbly.
Assemble Nachos:
Transfer sweet potato nachos to a serving platter/plate (with the parchment paper for ease). Top with guacamole and Pico de Gallo/salsa. Serve fresh and enjoy!
Notes
Keep an eye on the sweet potatoes: It is best to keep an eye on the sweet potato slices. Cooking time may vary slightly depending on the thickness and size of sweet potato slices.
Don’t overcrowd: Make sure the sweet potato slices are in a single layer in the air fryer. Overcrowding can lead to uneven cooking.
Serve fresh as a bake: These nachos are unique – in that they are more delicate than regular nachos, so I would recommend serving these immediately as if they are a nacho bake. Serve using a large serving spoon – it may also help enjoying these with cutlery if preferred (like a bake).
