Sweet potato chaatwith nectarine is a unique twist on chaat… The perfect dish to add a burst of flavor to your meals! This recipe combines the natural sweetness of sweet potatoes and nectarines with the tangy zest of chaat masala and fresh lemon juice.
Cook sweet potatoes until tender using a microwave or in a pan. To cook in the microwave, thoroughly wash the sweet potatoes. Pierce with a fork and microwave for 5-7 minutes or until cooked. Allow to cool.
Peel and chop the sweet potato into chunks and place into a bowl.
Add in the lemon juice, sprinkle with chaat masala and half of the chopped coriander/cilantro. Toss to combine, the sweet potato will start to become soft and slightly mashed.
Fold in the chopped nectarines and combine.
Garnish with pomegranate seeds and fresh coriander. Serve fresh and enjoy.
