550gBrussels sprouts(or 3 ½ cups) washed, peeled/trimmed and marked with an "X"

1teaspoonCumin seeds
1Onion (yellow/brown)chopped
1-2Green chillieschopped
2-3Garlic cloves chopped

1Tomato (or ½ cup) chopped
BunchCoriander/cilantro (leaves + stems)¼ cup chopped (or handful)

Spices and Seasoning
½teaspoonSalt
½teaspoonTurmeric powder
1teaspoonPaprika
1teaspoonCoriander powder
¼teaspoonGaram masala
½teaspoonAmchur/amchoordry mango powder
Instructions
Heat olive oil in a large pan. Add cumin seeds and cook on medium-high heat for 20 seconds.
Add garlic, ginger and chillies and mix for 5-10 seconds.
Stir in the chopped onions. Cover and cook for 5-6 minutes on low-medium heat, or until onions are translucent.
Add the chopped tomatoes and water and stir. Cover and cook for another 4 minutes.
Add the chopped coriander/cilantro, spices and seasoning. Stir to combine, cover and cook for another 2-3 minutes.
Stir in the Brussels sprouts. Cover and cook for another 10-14 minutes, or until tender and cooked. Stir every few minutes to allow sprouts to evenly cook. Once cooked, serve and enjoy!
Notes
Select Fresh Sprouts: look for fresh Brussels sprouts (firm and bright green in color). Avoid wilted sprouts and any with yellow leaves.
Wash and prepare sprouts: remove any dirt or debris by rinsing under cold water. Trim the stems/outer leaves. Use a sharp knife to gently cut a small 'X' on each Brussels sprout. This helps the sprouts absorb more of the spices.
Cook with spices: include spices for the best flavor. Ensure you cook the sprouts for long enough so they become soft and flavorful.
