½cuptomatoesplum, cherry or regular tomatoes, chopped
3-4tablespoontomato puree/tomato pasteor more as desired (optionally seasoned with a pinch of minced garlic, dried oregano and teaspoon olive oil)
Instructions
Make the chickpea flour crust/base:
Use a sieve to sift chickpea flour/gram flour and baking powder into a large bowl.
Add the dried herbs (oregano, thyme and basil), salt and black pepper and minced garlic. Whisk to combine.
Add water and olive oil and whisk to form a smooth batter.
Preheat a non-stick skillet over low-medium heat, grease with a little olive oil. Pour the batter into the skillet and spread it evenly to form a round base.
Cover and cook for 3-4 minutes on one side until the edges are set and bubbles form on the surface.
Flip the crust, cover and cook for another 3-4 minutes. Once cooked, set aside and repeat for the remainder of pizza batter.
Decorate the pizzas:
Spread a thin layer of seasoned tomato purée over the pizza crust.
Sprinkle cheddar cheese and vegetable toppings (including bell peppers, onions, chilies and tomatoes) as desired.
Add another sprinkle of mozzarella cheese (and a pinch of dried oregano - optional).
Bake the pizzas:
Transfer the topped pizzas to an air fryer or baking tray (you may need to do these one at a time depending on the size of your air fryer).
Air fryer: Air fry in a preheated air fryer at 200°C (390°F) for 3-5 minutes, or until the cheese is melted, bubbly, and slightly golden, and the crust is crispy. Oven: Alternatively, grill the top in an oven, at 220°C (430°F), until golden. Slice, serve hot and enjoy.
Notes
Smooth batter: Use a sieve to sift dry ingredients including the chickpea flour and baking powder to prevent clumps and ensure the batter is smooth.
Preheat the pan and grease lightly: Make sure the skillet is slightly warm and greased before adding the batter to get a crispy base.
Monitor air frying/baking time: Cooking times may vary slightly depending on the air fryer or oven model and size, so keep an eye on the pizza to avoid overcooking.
