Add cottage cheese, lemon juice and maple syrup into a blender.
Blend until smooth and creamy. Taste and adjust sweetness if needed.
Serve in small bowls or glasses, topped with fresh sliced strawberries, lemons or lemon zest. Optional: Chill in the fridge for 30 minutes for a cooler pudding.
Notes
Use fresh lemons – bottled lemon juice won’t deliver the same brightness or freshness.
Strain the lemon juice with a sieve: toprevent adding seeds into the blender.
